10 oz goat cheese
3 Tablespoons honey
3 ounces pistachios
2-3 Tablespoons heavy cream
In a food processor, pulse together 1/3 of the pistachios until coarsely cut. Reserve in a bowl for garnish.
Pulse together remaining 2 ounces pistachios, honey, and heavy cream until it becomes a smooth past. Add in the goat cheese in 2 or 3 batches, until the mixture is smooth. Add more heavy cream to thin out the dip to your preferred consistency.
