2 Tb cooking fat
1 lb choice of meat, cubed (firm tofu would also work)
Seasoning of choice
¼ C chopped walnuts
1 sweet potato, peeled, grated
1 Granny Smith apple, peeled, diced
¼ C apple cider vinegar
2 generous handfuls fresh asparagus, trimmed and sliced on the bias
Heat fat in large skillet, cook meat lightly; remove. Saute walnuts 2-3 minutes; add sweet potato; brown. Add asparagus and apple, heat thoroughly. Return meat, heat evenly. Add vinegar, toss then serve.
