Rustic Tuscan Sausage and Kale Soup
•1 pound bulk Italian Sausage ( I like hot)
•¼ to ½ tsp crushed red pepper flakes
•1 cup chopped onion
•2 large russet potatoes, halved, cut into ¼” slices
•1 (14 ounce) cans chicken broth
•4 cups water
•2 garlic cloves, finely minced
•⅓ cup cooked crumbled bacon
•salt and fresh ground pepper to taste
•2 cups chopped Kale
•1 cup heavy cream
Fresh grated parmesan if desired.
1.In a medium skillet, brown the sausage over medium heat.
2.Add the red pepper flakes and continue browning the sausage until it is completely cooked.
3.In a large sauce pan or soup pot, over medium heat, cook the onion, potatoes, chicken broth, water and garlic until the potatoes are cooked through.
4.Stir in the cooked sausage along with the bacon, salt and pepper.
5.Simmer for another 10-minutes, then turn the heat to low and add the chopped kale, then the cream.
6.Heat through and serve.
